In honor of Thanksgiving, Blue Moon is featuring turkey dinner with a twist: a chicken and waffles burger with optional sides of sweet potato fries and a maple bacon shake. (I loved the sweet and savory drink, punctuated by little pieces of bacon which are fun to chew.)</p>

It, along with two slices of honey-cured bacon, is sandwiched between two freshly made onion-and-sage waffles. This &#8220;burger&#8221; is delightful and delicious, smartly spiked with a smear of maple horseradish mayo.</p>

Clearly, this combination has roots in Southern cuisine, likely African-American and rural. It&#8217;s a decadent dish that&#8217;s a special treat, one that&#8217;s full of fat and flavor. And proof that it can be good to go south.</p>

In an era when so many preach about the dangers related to sex, how about we extol the benefits of blow jobs and box lunches?</p>

It&#8217;s an opportunity to simply receive pleasure, and we all like and deserve that once in a while. (This is why the 69 position isn&#8217;t always completely gratifying, as it splits the focus between giving and receiving, or what some mistakenly call &#8220;work&#8221; and &#8220;play.&#8221;) In reverse, giving is a way of showing your affection and passion for someone, and wanting to make him or her happy. In fact, some people enjoy the powerful feeling of control they get from giving oral sex, saying it transfers to other aspects of empowerment in a relationship.</p>

Semen ingestion is said to reduce stress, lower blood pressure, provide vitamins, and serve as an antioxidant that cures cancer. (I do find it disconcerting that such talk tends to be male pleasure-focused, and await further research to prove the benefits of ingesting bodily fluids of both genders.)</p>

Certainly, but maybe less so. South Carolina has had some of the strictest anti-sodomy legislation on record. And on the other coast, in southern California, parental complaints about the words cunnilingus and fellatio resulted in a Merriam-Webster dictionary being pulled off the shelves of a school.</p>

No need to feel guilty if you want to nibble, lick, suck, and, ultimately, completely devour your chaffle at Blue Moon Burgers. That burger lies in waiting for the rest of month. Fortunately, there&#8217;s no such time limit in enjoying a similar eating out experience with a lucky partner.</p>

Last time it was <a href="http://seattlest.com/2008/03/25/he_sez_beer_she.php"><span style="color: #1a1a1a;">Waterfront Seafood Grill</span></a>. This time, when <a href="http://www.sazeracrestaurant.com/"><span style="color: #1a1a1a;">Sazerac</span></a> asked if we wanted to sample some &#8220;damn good food&#8221; from its Southern-inspired menu, we said &#8220;damn right we’ll be there.&#8221;</p>
<p>Sazerac’s had <a href="http://seattlest.com/2008/02/14/sazerac_gets_a.php"><span style="color: #1a1a1a;">a bit of a makeover</span></a>, with red and amber shades and new lighting creating a chic atmosphere. Tables and table settings have changed; we especially liked the new pig napkin holders. (Then again, we like anything pig.)</p>
<p>Chef Jason McClure sent out 16 dishes. Sometimes-underloved dishes like oysters and oxtail shined in the simplest of preparations, whereas the liver and geoduck were over-adorned in a way that made them safe but lost as ingredients. This liver lover missed the liver taste and texture when crisp-fried in cornmeal and topped with red pepper marmalade and garlic aioli, while the geoduck (which is all about texture) crudo was sliced too thin (impossible to pick up—chopsticks, please?) and overwhelmed by okra pickles, olives, and Fresno chile.</p>
<p>But, what stood out were smoked, saucy dishes. The applewood smoked pork back ribs were cooked perfectly, meat falling off the bone and the cider-glaze finger-licking good. The smoked Oregon quail was the standout dish, offset nicely by springtime rhubarb and a white barbecue sauce made from aioli, crème fraiche, honey, and cider vinegar that was unique and, well, yummy.</p>

<p>With the upcoming <a href="http://seattlest.com/2008/03/25/he_sez_beer_she.php"><span style="color: #1a1a1a;">He Said, She Said</span></a> event in mind, we turn to Seattlest Audrey. She agreed on both the quail and ribs, but felt that the chicken liver dish was just fine. Few people (save a gourmand like Jay) enjoy the iron-rich flavor of liver to begin with, but deep-fry it and add a generous amount of aioli, and we’ll eat just about anything in that form. A similar standout was the crispy Idaho catfish. Normally, we’re not a catfish fan at all, but when accompanied by lemon-whipped potato and jalapeno-lime brown butter, the heavy bottom-feeding flavor was offset by all that deliciousness. Meanwhile, the hominy dumplings—not dumplings in the Southern sense, but much more like gnocchi—with duck confit, artichoke, leeks, and truffle grain mustard sauce was so delightful that we could’ve eaten the entire plate. That’s a dish to watch for when it’s added to the menu in the next few months.</p>
<p>As to dessert, well, Seattlest Audrey says you just can’t go wrong with the ooey gooey chocolate cake with designated pouring cream—the restaurant’s most popular dessert. The chicory pot de cream, with its smooth and light coffee-like flavor, was good too, which prompted a debate on what exactly is chicory (as it turns out, a flowering plant, the root of which can serve as a coffee substitute). The warm gingerbread cake was underwhelming, but as always, the day was saved by cheese—specifically the three locally produced artisan cheeses (one goat, one cow, and one sheep).</p>

In researching the restaurant, I noticed Proof on Main had garnered the same honor in 2006, and was immediately drawn to their menu. (I hope to get to Corbett&#8217;s another time.) The main attraction: Monday&#8217;s daily special of Tripe &#8220;Parmigiana.&#8221; Had to have it!</p>
<p><a href="http://gastrolust.com/wp-content/uploads/2008/11/proof-on-main-egg-art.jpg"><img class="alignleft size-medium wp-image-666" title="proof-on-main-egg-art" src="http://gastrolust.com/wp-content/uploads/2008/11/proof-on-main-egg-art-300x225.jpg" alt="" width="300" height="225" /></a>What I didn&#8217;t realize upon entering is that Proof on Main is inside the <a href="http://www.21cmuseumhotel.com/">21c Museum Hotel</a>. The restaurant itself houses some fascinating contemporary art, but during dinner it&#8217;s nice to take a break and stroll through the main museum, which is open 24 hours. (You&#8217;ll need to do this, anyway, to get to the bathroom, with the men&#8217;s bathroom really something special.) I found the dining room to be upscale and yet comfortable &#8211; smart and stimulating.</p>
<p><a href="http://gastrolust.com/wp-content/uploads/2008/11/proof-on-main-tripe-parmigiana.jpg"><img class="aligncenter size-full wp-image-664" title="proof-on-main-tripe-parmigiana" src="http://gastrolust.com/wp-content/uploads/2008/11/proof-on-main-tripe-parmigiana.jpg" alt="" width="500" height="375" /></a><br />This is one of those restaurants where solo dining is a detriment, as it&#8217;s impossible to try many of the tempting dishes. Also, business matters meant that I couldn&#8217;t get there until just before the 10pm closing time, so I didn&#8217;t necessarily want to fill up on too much food at that late hour. I had a hunch the tripe would be perfect, and I picked out an order of Brussels sprouts as a side dish. The tripe is boiled for 6-8 hours in water, vanilla bean and vinegar, followed by braising action with San Marzano tomatoes, carrots, onions, red wine and aromatics before being baked a bit at 600 degrees. Very tasty (though not with the tripe texture I typically desire), and served with some fettunta which I used to sop up the sauce.</p>
<p><a href="http://gastrolust.com/wp-content/uploads/2008/11/proof-on-main-brussels-sprouts.jpg"><img class="alignright size-medium wp-image-665" title="proof-on-main-brussels-sprouts" src="http://gastrolust.com/wp-content/uploads/2008/11/proof-on-main-brussels-sprouts-300x225.jpg" alt="" width="300" height="225" /></a>And the Brussels sprouts were fabulous! They were perfectly cooked, boosted by bacon and a little fruity sweetness. (The kitchen has been using either currants or cranberries.) I loved the dish so much that I tried to replicate it tonight as a side to some roasted chicken and vegetables. Close, but I must be missing some secret ingredient. I&#8217;ll work on the recipe, or ask for help. Great restaurants are stimulating and inspiring in this way. I&#8217;m thrilled to have had this brief experience at Proof on Main, and recommend it highly while hoping to return myself some day &#8211; with more time to see the museum, and perhaps a stay at the hotel!</p>
